Easy Summer Meals I Actually Make: Fresh, Colourful & Full of Flavour

As someone who is constantly balancing work, meetings and different projects, I don’t always have hours to spend in the kitchen. However, one thing I genuinely enjoy is cooking at home. It’s my little moment of self-care after a busy day.


I’m certainly not the most talented cook (hihi!), but I love experimenting with simple recipes that are colourful, full of flavour and easy to prepare. Somehow, they usually turn out pretty well!


Of course, weekends are a different story… that’s when I happily enjoy my cheat meals without any guilt.


My Favourite Viral Pizza


One recipe that has quickly become one of my favourites is the famous Hailey Bieber-inspired pizza. It’s quick, comforting and perfect for summer when you want something delicious without spending hours in the kitchen.


My Pizza Recipe


For the base you’ll need:

  • A little flour

  • 2 egg whites

  • Cottage cheese

  • 1 tablespoon baking powder

  • oregano

Simply mix everything together until you have a smooth mixture, spread it onto a baking tray lined with baking paper and bake until lightly golden.

Then comes my favourite part.

Instead of using traditional pizza sauce, I always use ketchup. It’s actually a little trick my mum taught me years ago, and I’ve never stopped doing it. The slight sweetness of the ketchup works beautifully with the cheese and gives the pizza a delicious homemade flavour.

Top it with mozzarella and your favourite ingredients before returning it to the oven until the cheese is perfectly melted and golden.

I served mine with colourful vegetables and a creamy dip from Marks & Spencer, although making your own dip at home is just as delicious.


Fresh Tuna Bowl for Summer Evenings


Another meal I absolutely love is a fresh tuna bowl.

I simply combine fresh tuna with sesame seeds, sliced jalapeños, extra virgin olive oil and freshly squeezed lime juice. Served with crispy tortilla chips, it’s light, refreshing and packed with flavour—everything I want from a summer dinner.

And because every little treat deserves something elegant to drink, my choice is almost always a dry martini. Classic, simple and one of my favourite little indulgences after a long day.


Looking After Yourself Doesn’t Have to Be Complicated


For me, healthy living isn’t about spending hours in the kitchen or preparing complicated recipes. It’s about making time for yourself, choosing fresh ingredients and enjoying food that makes you feel good.

These recipes may be simple, but they’re colourful, satisfying and fit perfectly into a busy lifestyle. They remind me that looking after yourself can be both easy and enjoyable.

After all, if I can make them… anyone can.
